A situation where the existing main circuit breaker and enclosure are 600A (which is not enough) and the meter stacks (both sides) are 800A (which is enough). (600A was under sized in the 80's and they want to add air conditioning)

Is there a good way to replace the circuit breaker (and probably service) with an 800A but retain the existing meter stacks?
Maybe a new enclosed circuit breaker off to the side and use the existing circuit breaker enclosure (with everything removed) as a junction box to connect to the buses of the meter stacks???
