What is the conversion for amp draw on primary side of step down trans? IE: 120v to 12v 600 watt trans. what would the amp draw be on the primary side be?

It depends on the amp draw on the secondary. There is a 10 to 1 ratio.

so with a 500 watt draw on the secondary it would be 41.6 so primary would be 4.1 correct?

For practical purposes you are correct. There will be a small charging current adding to the load current on the primary.
