Another Tap Question

I have an 800 amp main with two sets of 500MCM leaving the disconnect. The parallel 500s terminate in a large junction box. Can I take one set and feed two 400 amp disconnects (load is minimal) and take the other set to tap a 200 amp and 300amp breaker? Or, do I have to connect both parallel sets together before tapping them?
 
You cannot tap only one set since they two sets of 500 kcmil are a parallel feeder and need to be terminated according to 310.4.

I kind of agree, you could choose not to connect them, then they would not be parallels but they would be tap conductors all the way back to the breaker.

Then you run into the problem of length and that you can not 'tap a tap'.

You're correct. I kind of gave the condensed version of the answer that it isn't permitted due to the tapping of a tap rule and the length.
