I was attempting to replace three phase breakers to deep fryers at a Walmart deli and the breakers in the panel had wiring coming out the back to a connector block that fed to the Ansul system. Are there specially made breakers that have this wiring? If not, how does one disconnect and reconnect those wires to a new breaker if need be? Thanks in advance.
 
Yes. They are "shunt trip" breakers which have a buit in mechanism top trip the breaker when signaled by the Ansul system. That internal mechanism is available in various voltages, not necessarily matching the line voltage, so you need to be specific when ordering.

As stated above, a shunt-trip breaker is a breaker that can be tripped by 'remote control' in addition to normal breaker functions. There is a coil inside the breaker that can accept (typically) 120v to 480v, but it usually can not handle being constantly energized.

Coil damage can be avoided by either having the tripping power come from the circuit the breaker is powering, or by the breaker containing contacts in series with the coil that open when it trips. The shunt trip itself can not be moved into a new breaker.
 
The breakers I am working with ar cutler hammer fd3040 and fd3060. The old breakers have a yellow and white wire coming out of the back that connects to a terminal block that then goes to the Ansul system. but I cannot find the breakers WITH those wires to order. Any help is appreciated.

See page V4-T2-424 of this Eaton Catalog. As others have said, you will need to know the system voltage to order the correct breakers. Also know that while there is a field installation kit available for the shunt trip, you cannot field install it without voiding the breaker listing as you have to break the seal on the breaker that provides access to the trip assembly.

Please note, the voltage don is referring to is the coil voltage for the trip mechanism. Also make sure either the coil opens after the trip or it's rated for continuous on.
