Erico (Caddy) has a product (CADDY? CAT HP J-Hook with T-Grid Clip that looks like you put in on the ceiling grid. I've never seen a ceiling grid without a ceiling tile in it. The picture in their catalog even shows this j hook on a installed ceiling. Are ceilings or ceiling wire a legal means of support for low voltage cables (CAT 5e) now?

Reflexively, people tend to say, "no". However, it really depends on the grid system manufacturer and whether he's gone to the trouble of having the system listed for supporting any cable plant. Plus, if you look at the fine print, it says "Additional support wire required per NEC 300.11"
