Bakery load calculation

Guys-

My customer wants an estimate on upgrading the wiring in a ex-barber shop. They plan to use the building as a small bakery. The existing service is 200A, 3 phase 120/208V with on 42 circuit panel. After reviewing article 220.20, I'm still a little unsure on the requirements. It's all electric, no gas. Can someone give me a load calculation example? I'm new to commerical work like this. Thanks.

Have you looked at the Annex D examples?

You need to find out what equipment will be installed (all of it), get the load for erach appliance, and then calculate total load for all of the equipment, lighting, HVAC, receptacles, signs, etc. There is no easy way to do it and there are no typical bakeries. I doubt 200 amps will suffice if all electric.
