Across different brands, the box indicates compatibility with 14 -16 gauge wire, but I've noticed that with more than one brand 12 gauge stranded fits and seem equally secure when crimped. Is this a big deal among electrical inspectors?

They make for a less congested look when used on .25" barrier terminal strips.
 
It's probably a listing violation to use it on wire that is not rated for size-wise 110.3 B.

If they are color coded for size, a sharp eye inspector may notice it and fail you.

I would try looking for other products or brands that have the compact size you want and are rated for the size wire you are using.
 
Like a lot of things that are probably perfectly safe to do it may well be a violation of the instructions that came with the listed device. Having said that some of the crimp on connectors people use aren't actually listed.
