What size bending radius would be needed on 3/0 THHN in a subpanel? Would it be eight times the diameter?

Technically THHN does not have any minimum bending radius.

However, when entering or exiting an enclosure you follow 312.6 and, specifically, when terminating the conductors you need to follow 312.6(A) or 312.6(B).

its my opinion that in order not to violate the ul listing of the conductor you must be certain that you abide by the manufacturer's instructions. For example, the following manufacturer's instructions (scroll down) tell you to go to the (2nd link listed) and there they specify a bending radius for their THHN single conductors

These are general values, from ICEA, for use during pulling and are not specific to any insulation.
