Application here is a ABB PSE soft start ( with a 4-20 mA analog output ) running 120V control wiring out 125 feet in regular SOOW type cable ( unshielded ) to a custom pendant. We need to put an ammeter in on the pendant and run it off the analog output of the soft start. It would obviously need to be scalable as the analog output represents 0-120% of the FLA parameter.

the analog output of the soft starter should be scalable, but running a 4-20ma signal in unshielded cable along with other 120V controls is just begging for trouble. Get shielded cable, they make it in flexible cord like SOOW. But you will have to get the type where each pair INSIDE of the cord is individually shielded.

I don't know how many conductors you need for the pendant, but if it's 3 or less PLUS the two for the analog signal, Olflex makes a VFD style shielded cable that has a separately shielded signal pair inside of the bundle.

Just use a basic 4-20ma process indicator (scalable, of course). There's all kinds of 'em out there...
