How to specify a box with same hole pattern as that of a double switch or double outlet box.
Is it correct to specify an electrical junction box or is it correct to specify double gang switch or outlet box by depth in inches?
How does an electrical junction box differ from a switch box? Are there any graphical illustrations that show difference?

Probably the best way to answer your question would be to look through some manufacturers catalogs. Your question is way to broad to adequately answer here.

Generally all device boxes (those which are designed to accept standard switches and receptical yokes) have the correct hole spacing. Some come in single and multiple gangs, others may be assembled in multiple gangs by the user. Still others require a cover or ring to mount the devices.

Then there are round fixture boxes that are designed to mount fixtures either in a ceiling or wall. These will not accept switch and receptacle devices. There are rings however for some of the above boxes to mount fixtures.

Every one of these boxes come in a great many mounting arrangements and various depths. All could be used for junction boxes and there is another catagory of boxes just for that purpose.

I would go with Hal's advice here. If you want to specify something specific look through some Catalogs, find a make and model # that suits your purpose and put that in the specs.
