I was reading another post about 1600A service with undersized conductors but cannot seem to find it. I wouldnt recommend this as an option because of the what if scenario of tampering with settings but...

Question for you all.
Per code conductors shall be sized for OCPD. Hypothetically if you had a 1600A MDP equipped with a 1600A adjustable trip breaker that was turned down to 1200A, could one get away with sizing 1200A conductors?

Unless there's a specific thing with services that I'm forgetting: you bet. There are multiple places where the wording is something like the "rating or setting of the overcurrent protective device"

Permissible but not just as simple as changing the setting. See 240.,6(C) for requirements.
