Is there a difference as far as the NEC is conserned between a cable and a cord? 200.7(C)(1) got me to wondering, and I didn't see either in Art. 100.

Without looking up the actual definitions, right away cord implies a temporary installation, while cable implies a permanent installation.

Yes, there is a difference, that is why they made sure both were mentioned.

They did not mention, emt, flex, etc. etc.

Take a look at Art 400. Also take a look at the definitions for the cable types such as Art 330, 334, etc...
