What is proper size wire, disconnect, and Breaker for a 480VAC 3 phase motor with a full load amperage of 27 amps?

What does a "biomedical engineer" need to know this for?

Start at in Article 430 at Part II, then go part IX, then Part IV. Give it a try as Roger suggested.

Let me point you to the appropriate code sections.
FLA- table430.250
Wire size- 430.22 & 310.16, 310.15(B)(2)
Disconnecting means- 430.110
OCPD- 430.52, 430.58, 430.62
