Can I run a split phase power unit off single phase power?

I am purchasing a hydroponic farm and the cut sheet is calling for 120V AC split phase power or 208V 3phase connection, 60 Hz, 100 Amp? The transformer I will be drawing power from a single phase transformer. I do not have access to 3 phase power. The power company, my electrician and other professionals have never heard of split phase power. Can I run this unit on single phase power? Can you please help me? Thank you!
 
Split phase is a common name for the most common residential service in the US.

It is 240V single phase service 'split' with a grounded center tap to provide 120V as well as 240V.

I agree with Larry. The cut sheet is not using standard terminology.

120V is half of a split phase supply. So you don't know if you need 100A at 120V or 100A at 240V with 120V available.

But it is almost certain that they want 100A at 240V, single phase, with an option of using three phase. My guess is that it only needs 2 legs of 3 phase, similar to an individual unit in a large apartment.
