In three-phase systems, for the purposes of analysis, can the three voltage or current phasors be assigned any angle, as long as they are 120 degrees apart from each other, or must A be 0, B 120, and C -120 degrees?

You can pick any value you want for one of them. The rest will be based on that one. You can say that the A phase voltage is at an angle of 42 degrees, and calculate the others from there. It is just that the math becomes a bit trickier.
