I'm bringing in CAT 5 internet wire in to a detached garage from the house via 1" grey PVC SCH 40 in a 12" deep trench from the house.
How should I bring that into the garage and string it through th plenum before dropping it between studs to the low voltage box?
And where an I find CAT 5 info in the NEC code?

If the 1 inch is exterior I'd use a LB and or a bushing.
and string it through th plenum
Plenum, what do you mean plenum? Like a article 100 definition plenum?

Article 725, its a class 2 wiring or some say article 800 there is little difference between the two

The underground portion should be a moisture resistant type cable. The cat5 will be sensitive to moisture penetrating the cable.

For all that work, is it possible WiFi would do what you want. For longer distances Ubiquiti makes small point to point wireless.

If there is every any possibility the garage could be where the Internet service comes in, I'd pull two cables. Common for detached garages in the city to have the fiber ONT in/on the garage. Then you can send the incoming Ethernet into the house to the router and have one come back to the garage for the home network.

Need to check the bending radius for the CAT 5 cable being used...so have a minimum bending radius that cannot be met where installed in a 1" LB.

Your challenge will be to find wet location rated cat 5
And if using cable go with 5e or 6.
keep in mind the distance limit for cable
use a 4x4 pvc j box instead of an lb
