I'm installing 8, 52" ceiling fans in an church sanctuary,the fans will not have any light
fixtures,the church wants all to work on one fan speed control.What calculation do I use to see how many fans can run on one speed control device.

To me it is not so much a calculation as a contact. . .The fan manufacturer's engineering support person.

what is the amperage or wattage per fan times 8? Should be the rating of the speed control. Verify with manufacturer. They may have a specific brand they recommend so as not to void warranty.
