Change in Lug Sizing

I need to have 3 runs of 250MCM per phase but the breaker that is installed has lugs sized at 1LUG/PH 2CABLE/LUG 2/0 -500 MCM

No additional lugs exist for that breaker. would have to replace entire panel to get different frame breaker. Anything you can recommend to avoid installing a brand new panel?
 
What is the required ampacity of the circuit? You could install a junction box with power distribution blocks outside the panel. Three 250 kcmil in, 2 xxx kcmil out. Note that if you need the full ampacity that three 250s can support you are out of luck as two 500s is just shy of that.
