Changing 14-30 to 6-20 Outlets

The house we just moved into has a workshop with 240V 14-30 outlets (and 30 amp breakers) but some of my equipment has 6-20 plugs. I have been told that I cannot just change the outlets to 6-20's without also replacing with 20amp breakers. I am a retired engineer good and good with mechanical/materials issues but definitely not an electrician. I am comfortable isolating the sub panel and working on it but wanted to know if there's anything I would have to look for beyond just switching out the breakers and outlets. I would hate to call out an electrician for something that seems so simple. Is there anything that would make this more complicated than I'm thinking? As an engineer, I'm also very cautious-
