Class 1,2 and 3 in Article 700

I am having a little trouble differentiating Class 1, 2 and 3 as far as voltage and power. At my work, I keep hearing that Class 2 is under 30 Volts and 100VA. I do not see this in the NEC though. So as far as Voltage and power, what is the difference between Class 1, 2 and 3?

Its Art 725 by the way.
Class 1 is power and non power limited, both are wired with chapter 3 wiring methods
Class 2 and 3 limit the power and voltage to limit fires and shock.
