COMMERCIAL TRIPLE FRYER UNIT - THIS UNIT REQUIRES TWO 125 AMP, 3
PHASE, 208 VOLT WITH GROUND FEEDERS AND ONE 100 AMP, 3 PHASE :) , 208 VOLT FEEDER.
THE FRYER UNIT IS ON WHEELS. I WILL BE MAKING A FLEX CONNECTION FROM THE
WALL JUNCTION BOX (OR DISCONNECT ?) TO THE FRYER UNIT. DOES THE CODE
REQUIRE SERVICE DISCONNECTS AT THE FRYER UNIT ?

article 422.31(B)Appliances rated over 300 volt-amperes or 1/8 horsepower.For permanently connected appliances rated over 300 volt-amperes or 1/8 horsepower, the branch-circuit switch or circuit breaker shall be permitted to serve as the disconnecting means where the switch or ciruit breaker is WITHIN sight fom the appliance or is capable of being locked in the open position.

given the power requirements you stated I think it is safe to say that the fryer is WAY over 300 VA. :D
