Would anyone be able to direct me to a link to show wiring schematics for a commercial kitchen makeup air/ exhaust & Ansul system. The system that is installed, I believe, is a captive air with 2 exhaust roof mushrooms and a makeup air unit. Any help would be appreciated, thank you

There is no single schematic that covers every system. If the system comes with a wired control box, it's just a matter of connecting the external incoming power circuits and outgoing fan and light wiring. There is usually a diagram showing these things accompanying Captive Air systems.

I have wired many systems, both retro-fit/upgrade and new installations. The rules are that, upon a system trip, the exhaust must turn (night mode) or stay on, the make-up must turn or stay off, and any electrical or gas appliances, and usually the lights, must shut down.

The gas valve can be electrically controlled, with a separate latching-relay control box, in which case cannot be engaged unless the exhaust is switched on, or, with a mechanical gas valve, a hood or duct thermostat must cause the exhaust to turn on at, usually, 100 degrees F.

With this information, tell us what you have, whether there is one switch for make-up and exhaust, or separate switches for each, the fan contactor arrangement, appliance types and gas valve type, etc., and we can guide you better from there.
