Nearly all the GFCI requirements are in 210.8.
Find Other Than Dwelling Units in (B) [commercial is trade lingo, not always used in NEC]
Not that while a job trailer with a sink and microwave may look like a kitchen, its not a kitchen requiring GFCIs.

I just to add that I owe the member on Mike Holt more than words can express. You all have brought me leaps and bounds in the last few years.
I tell everyone I was taught by the best.

Most places will not consider a microwave permanent provisions for cooking. Usually need to have a range, cook top, oven, or any appliance that requires a hood for commercial kitchens.

Thanks kwired.
This kitchen , other than dwelling unit, has a convection oven and a sink. As well as a hood. Although the AHJ required the hood. Now I'm looking at buying 8 GFCI outlets. I had only planned on the one next to the sink.
