Commercial Kitchen hoods

In my mind there is some special rules for commercial range hoods. I really could not find anything except some minimal content in 410 about listed lighting, 422 about cords and 517 about back up power, also I would call it continuous for wire size. Can anyone help me about specific requirements that I am missing like disconnecting means etc.

The usual rules are, when there's a system trip:
The exhaust fan must come on or stay on.
The make-up air fan must turn off or stay off.
All electricity under the hood must lose power.
Electric gas valve: exhaust on, gas reset button.
Mech. gas valve: T-stat w/10-minute exhaust.
Horn/strobe or building alarm connection.

That is good and I wouldnt mind some or any more stuff related to these kitchens. There was a point i worked on the popcorn makers and did a renovation or 2 when I was a bit younger which mainly consisted of pulling some unfinished stuff together at the end of the job to meet a schedule.
Last one I was significantly involved with had every trade in an addition which involved new walkin freezer thru cooler. The owner owned a trucking company I did work for. The bar job didnt really have a real general contractor, the owner couldnt use a screwdriver but he knew someone that could and had a close cousin was EC did about 1/2 of the job. Wouldnt be surprised it was gambling debt,,, ha

All the ones I've seen have what appear to be 'wet' lights-- glass domes and metal cages.
