Commercial kitchen lamp protection

I am having trouble finding the article about no open lamps in the kitchen or over a serving line. I know that fluorescent fixtures need to have lenses, and incandescent fixtures need to have lenses or be rated for rough service. But I can't find it.

This is usually covered in Building Codes, USDA, and Health Department regulations.

Shoot I thought it was in NEC, any guesses on which NFPA might cover?

I can't find 'kitchen' anywhere in the list of NFPA publications. Covering lamps, as Roger indicated, is a health issue, not a fire hazard. I'd also be surprised if any of the Codes Roger mentioned requires 'rough service' bulbs.
