I had a local bar owner ask me about doing some wiring for a kitchen that he is planning on constructing in the bar. This is a rare type of project for me. Are there any code requirements that I should be aware of when giving an estimate? I want to make sure I don't forget something and be way off.
 
Shunt trip for anything under the hood and interlocked with the ansul system. Local fire codes might require an interlock between the make up and exhaust and the fire suppression and alarm system

If you have access to a set of designed plans, approved by the AHJ, it should cover most of your bid components. But what the others have said are issues you will have to contend with. ;)
