Is there a requirement for surface mount conduit and boxes to be weatherproof in a commercial kitchen?

I've seen both regular surface mount 4 square boxes with SS connectors and weatherproof bell boxes mounted with compression connectors in the same areas.

Also have seen many nema 1 and nema 3r disconnects mounted on walls in the same location depending on what contractor happened to do the install.

I think that the requirement has more to do with the actual use of the kitchen and how they plan to do wash downs. If it's anticipated that there will be washing with a hose then IMO it would be considered a wet location and the appropriate equipment needs to be used.
 
If washdowns are actually being done. Like who actually uses a hose to wash the walls of a kitchen anyway? I’ve never heard or seen such a thing although have seen it done with public restrooms.

At one time I was informed that the health department required horizontal exposed conduit runs to have a gap between wall and conduit so not to accumulate debris that is difficult to remove.

Is there a requirement for Garbage Disposals to be GFI Protected in a commercial kitchen if hard wired 120v? or does that just apply to the circuit if they are cord and plug connected?

I have inspected commercial kitchens that peform power washes and they were treated as wet locations. I also understand that in NJ where commercial butchering is done power washes are required.

210.8(B), as recent as NEC 2017, still only mentions receptacles in commercial kitchens, and not hard wired equipment. GFCI protection should not be required.
 
With most all of the requirements for GFI protection being related to the "Receptacles", whether in a dwelling or non-dweling unit , I'm not sure why most haven't resorted to just hard wiring as many appliances as possible, and, getting away from the GFI requirements.

It's not like the receptacle outlets for dishwashers, garbage disposals, trash compactors or, even refrigerators are ever used for anything else.
