Can a comerical cooktop or griddle use a demand factor from table 220.55 or does table 220.56 only apply? I'm looking at a griddle has a nameplate of 21.5 kw at 89 amps. The voltage is 240 volts.

It's actually a barn that will be used for wedding venues.
