What type of conduit fittings need to be used on a NEMA 4X SS enclosure?

I assume there is a specification, so I would assume you have to follow it. The fittings should be in the Submittals, but I would assume you are running GRC so it is likely you would use meyers hubs. If they require SS fittings then they also exist, for a pretty penny.

He probably figured that out if he supplied the SS enclosures;)

At some point you still have a transition between SS and the GRC, or if you need the corrosion resistance you may even have SS RMC or PVC coated RMC.

And if the OP's concern is the transition, there isn't any "dissimilar metals" concern or similar. The metals can contact each other just fine.
 
What "must be used" also depends on if maintaining 4X rating of enclosure is a must. Installed in a dry, non corrosive location - you can use about any kind of raceway or cable and associated fitting, the 4x enclosure is sort of overkill but not a violation.
