Copper line used for grounding

I have updated an 1980 residential electrical panel to A square D QO 200 amp panel. I followed the code and drove two ground rods as per electrical code and was approved by the Washington Inspector. The whole house was in Copper including the feed from the water service. The hot water and cold where grounded with in 5 feet from the entrance in the building. I have started to replace sections with Pex and I need to install a shut off near the entrance of the water in the building. Not sure how it should be grounded when the continuity of the copper pipe is broken?
 
If metal water service hit that with your GEC. I wouldn't worry becuase the copper pipe that's left will either eventually be replace or have no chance to be electrified like the little copper 90 stubs they use on pex for stub outs.
 
As long as the first 5' into the structure is copper and is still part of the water pipe electrode you're good.
