I ran cat 5 cable for the office phones, 2 lines. No one stocks POT wire anymore. Office helps says they can hear me when we both are on the phone at the same time. Would changing pairs help or did I screw up somewhere? Obviously I did, but what?

Check to make sure you did not "split" the pairs. That is you used wires from two different pairs to connect one phone.
