That is open ended ... a fuse is one as is a breaker ... or an Amprobe with its built in current transformer (CT). Exactly what do you want this "current sensor" to do?

OK, Print calls for me to supply a current sensor on a specific circuit so when that circuit is in use the current sensor will see the load and kick on an ehxaust fan. So in a sense the current sensor will control this exhaust fan.

You want a "current switch".

I used to use a self contained one from NK Technologies. http://www.nktechnologies.com/products_current_switches.htm

I think another company is Relay-In-A-Box.

Commercial, kitchen equipment. Have a combination oven/proofer hood that calls for the exhaust fan to run when the oven is turned on and controlled using a current sensor.
 
CT's output DC voltage relative (but much lower) to the current passing through the CT. You will need a device, maybe a DC relay to indicate overcurrent.

Ct's are available in electronic type stores or online. They cannot spec the CT for you. Get together with the person that is requiring them and let him do the math. Let him pick the CT's and the devise they are to operate. You just install them.
