if you had MC cable run everywhere and most of the gyp walls were staying but hey wanted all the cable removed that would be tough correct ? how would you pull out of walls if it’s secured?

what about if the branch was EMT and not MC cable ?
 
You really don't know the answer to this? Either they remove the wall board or cut it at the ceiling.... BTW, why would they want it all removed? Sounds BS to me.

Sounds like BS to me also.
They have to at least remove one side of the wall board. If it's a large area that could save quite a bit.

It should be relatively easy to remove wires within EMT if all the wining connections are accessible according to code.
If anything, I'd think having some empty EMT raceways available might make a new installation easier and maybe even better in some ways. And if it doesn't then they wouldn't be hurting anything.
