Dishwasher Breaker Size

If I have a dishwasher that is 480V, 3 Phase and it drawings 27 AMPS.

What will be the breaker size, should I go with 27*1.25 = 33.75 Amps.

Should I go with 30 or 40 AMP breaker.

Showing a chart from online means nothing. You need the nameplate rating of the equipment. What size wire are you running? Does the equipment actually draw 27 amps.

Why add the 25%? The load is 27 amps non-continuous so 30 amp circuit.

Don't motors and heaters need to be at 125%

A dishwasher is an appliance so you can use the nameplate to size the branch circuit. Also it's not a continuous load so the 27 amps is what you would use to find the minimum branch circuit size.
