DIY-er: undercabinet power strips during a backsplash reno?

so I'm looking to get backsplash redone and thinking I'd remove all the outlets and switches to go under cabinet.

I'm a DIY-er and think I feel comfortable adding gangboxes if the tile guys cen just run the cable up to the crease where the backsplash meets the under cabinets.

Any advice or thoughts?
