Double MC cable connectors

By NEC code, can a single mc cable be installed in a double mc connector? Or a single mc cable in a double mc cable to 3/4" EMT changeover fitting?

It depends on the listing of the connector. The connector instructions would say something like suitable for use with one or two cables.

I don't know for sure but I do it whenever I feel I may be adding an additional circuit in the near future.
