Cat 5E cable is 24 AWG. Can the conductors be doubled, IE run in parallel, if the wire size is too small?

too small for what?
Probably doorbell, camera power, intercom.. etc. People here use cat5 for everything.

I say no way any lv aplications should be a min of 18 awg in my opinion. Tel wire is for comm only.
Wiring the Digita?-1 Switch
1. From the tap wire coming from the Digita? Switch
BUS, wire nut the Green, Brown and Orange conductor
of the CAT5 wire to the Green lead wire of
the switch.
2. Wire nut the Green/White, Brown/White and Orange/
White conductor of the CAT5 wire to the
Green/White lead wire of the switch.
3. Wire nut the Blue conductor of the CAT5 wire to
the Blue lead wire of the switch.
4. Wire nut the Blue/White conductor of the CAT5 wire
to the Blue/White lead wire of the switch.
