Anyone have some suggestions on a digital two-circuit thermostat that isn't a King? Might be a hard ask but any advice would be great.

Its not clear what you mean by " two-circuit." Exact information would be helpful.
Depending on what you are controlling there are numerous HVACR type controls that use thermistor type sensors that can be set up for Multi-Stage configurations. I have used the Johnson Controls A-350 Series many times for custom built applications. They are DIN mount and can be expanded after the fact. It looks like they have been superceded by System 450 series, but there is still the 350 series gear at large and available.

Seems like he wants a digital tstat that is a DPST. There seem to be a few options out there.
If I wanted both loads to stage on at the same time I'd add a contactor and have a standard offering tstat control the contactor and the contactor control the loads......if that makes sense to you.
Now if you want different set points/differentials.....or one to be DA and the other RA.....well now we are starting to get a little more complicated. So we would need to better understand what you want to do.

I never herd of 2 circuit. 2 stage thermostats yes. For heating their are units available wit two stage gas valves. Temp drops stg 1 fires if it doesn't keep up and temp drops stag 2 fires up

480 I have a system like this running currently for dual condenser walkin cooler. There are a lot of ways around.

Baseboard heater thermostat maybe? Haven’t seen any of those in digital, but then again, baseboard heat is very rare around here.

This is what I had to do for a hydronic heating system which used 'drive-open' and 'drive-closed' valves. Very few reasonably priced electronic stats offer SPDT contacts. I decided to go with a standard stat and just keep a spare relay on hand.

Line volt 240v stats used for baseboard? Those have a 2 pole SS relay or triac. There are so many different brands. Many even use a PWM control for more even heating.

Many moons ago, I used the heck out of the Ranco ETC series stats for produce coolers. I installed a couple hundred of them, easily. They're great multipurpose stats that can be had in 2-stage, and you can set it to be in cooling or heating mode. Bonus is that we would cut and extend the sensor cables using UR connectors and Belden cable. I know for sure we've done it over 100 feet, maybe more.
