What type of demand factor do you use when calculating a load for a Restaurant

Just want to confirm, if I am comply everything with the NEC code

Generally the demand factor I use when I create a Panel Schedule is
Kitchen & Receptacles @ 70%
HVAC @ 100%
Hot Water Heater @ 100%
Refrigeration @ 100%
Lighting @ 125%

That method probably leaves you with larger service/feeders than 220.56 or 220.88 would permit you to have in most cases.
