Do you think running EMT through metal studs is more time consuming that installing overhead @7-8’ open?

Stub up and around cost a lot more than one stub up and around the inside. Your piping it around plus every location is up. Two boxes and extra wire,wire nuts nad labor.
The new guys like it because it's quick wall rough and easy. Top out takes a lot longer. Not to mention your up and down a ladder all the way around.
In wall you can pull wire and make up and be ready for finish while your there. I also do ceiling rough and hang whips while in that room.
With an open ceiling I would not want all the extra boxes.

If you have access to the ends of the studs it can go extremely quickly, but if the trusses are close I'd prefer them, if they're 25' up, I'd run in wall
