exhaust fans in Kitchen

If a customer wants to put a exh fan in the kitchen ceiling of the cook top? does it have to be approved for use over cooking equipment or can i use any fan? cook top is island & they don't want a cabinet.
 
I would think that you would have to follow manufactures instructions and see where the fan is allowed to be installed. I wouldnt want to use an exhaust fan above a range that didnt have one of those removeable filters to catch the grease thats in the air that you can remove and clean, and keep the motor and insides of the fan from getting gummed up.
 
I'm pretty sure I've seen regular bath fans that say not for kitchen use or something like that.

You are correct, Bath fans are not for moving oil laden air. Neither is the ductwork. I had a builder ask me to use the recessed cans by nutone that are also a fan. I told him they were not rated to go in a kitchen.
