I?m looking at an installation of six 48? Roof Ventilator Fans in one of our production buildings. Does the NEC (I looked but did not find) address what safety features and / or requirements an Exhaust Fan must have; for instance a Temp Fusible Links that would stop the motor and close any louvers or maybe a floor level Master Shut Off for all the fans (the six for this installation will be controlled from a single MCC) incase of a fire?

They would not be in the NEC, if they exist they will be in the fire codes. Likely that will be NFPA 72.

Not the NEC, but perhaps some other standard. I doubt it though, it is usually nice to remove the smoke during a fire. I'd be more concerned with a make-up air fan.
