A 4 square box is mounted as high up on a metal frame back splash Knee wall as possible. The Cabinets being installed come from China and are 35-1/4" high. there is a 3/4" plywood base under 3/4" granite. ounter top is 36-3/4" AFF. The top of the knee wall is 40-1/2" ( a breakfast bar will be installed on top of it to make the height of the breakfast bar 42".) Here is my challlenge
I have too many wires in box to use a deep 1 gang old work box.
What I am considering as a solution is this.
a 2 gang mud ring 5/8" raise. blank off one side therefore giving me an offset type mud ring. Also using a box extender to bring out thru backsplash which is 3/4" thick. Any thoughts on this solution? Or any other ideas?

Put a junction box in the cabinet below (flush or surface mount it, your choice) to splice the excess conductors in and only run one cable to the outlet box above.

I saw the offset mudrings from Garvin. My problem is time. Needs to be done yesterday. My only concern is; Is there any code that would not allow what I want to do?
They sell them at Home Depot (hopefully in yours)

This is the best idea, think out side of the box, and into another box.

NO
Is that material listed for the application you consider?
I'm sure it'll work, and I'm sure is not much of a hazard. But will not be UL listed, and as most AHJ asks materials to be UL listed, I doubt it'll pass inspection.
