NFPA 72 - Smoke alarm or detectors are no permitted within 10' or 6' of a stationary cooking appliance (based on the type of smoke detector).

So, in a kitchen, we use Heat detectors... I think that is common knowledge. But does anyone know if there is a restriction for location of a heat detector in a kitchen? Does the NFPA allow them to be within 6'? I can't find anything in NFPA 72.

I don't recall seeing anything restricting the location of heat detectors. The lowest setting I'm aware of is 135°F, with or without rate-of-rise. I doubt any residential kitchen will see that temperature at the ceiling, but commercial locations might. In that case, you would use 194°F units.
