So typically, what kind of service is ran to a fire protection pump?

3 wire ungrounded delta?

3 wire corner grounded delta?

some kind of 4 wire service?

An explanation of why would be appreciated as well. Thanks.

So the fire pump doesn't have to be on it's own dedicated service? separate from the main facility's service?

If there is a POCO transformer on the property feeding the customer's switchgear in an electrical room, the usual deal is to tap the service ahead of the switchgear to provide a separate set of service conductors for the fire pump. If they pull the meter or the switchgear goes down for any reason, the fire pump will still run.

Makes sense. Thanks for the reply!

Here the POCO would require the fire pump to be metered.

This is also the requirement in the state of CT.
