What are the approved methods of underground wiring (outside the building) for fire pump? Is PVC schedule 40 approved? Are there any extra requirements.

Article 695.6 states that service conductors are to be routed outside and as per article 230. 230.49 states undergrund service conductors are to be protected as per 300.5, which list minimum cover requirements. You ask "approved," this by definition is "acceptable to the authority having jurisdiction!" PVC should be accepted.
