With a furniture system like this how would you know whether you supply the receptacles or the others do for you to install?

All of the modular furniture systems I have seen (by no means all of them) supply the actual receptacles that match the finish of the parts.
Some systems with internal bussing instead of "soft" wiring actually offer three different receptacle modules to allow you to select the branch that each duplex receptacle connects to.
I guess, short of generating an RFI, you could first look at the specs for the brand of modular cubicle/furniture being used.
