So I have two questions here… First, is it possible to use a single genset for two separate services? And second if it is, does my math and single line check out for the configuration regarding the scenario below:

Bldg 1 TF 12470/480 ____ kVA
1000 Amp Service, full building on generator
60HP Fire Pump
1HP Jockey Pump

Bldg 2: TF 12470/480 ____ kVA
400 Amp Service, full building on generator
No Fire Pump

Diesel Generator ____ KW to serve both buildings?

Yes, you can use one genset for 2 services. Careful thinking will need to be done as to SDS VS non-SDS. While I did not review your math or 1 line, I would point out that you will need ATSs in each building. Also note that a fire pump ATS must be listed for fire pump service, not just listed for emergency. You will also need separate ATSs for any Art. 700 load.
