For GFCI for Open Fryers and Dishwashers, the engineer is using SB5000 series Little fuse Shock Block Device. See the link below for that device. Would this comply with NEC 2017 as gfci protection or GFCI would need to be at breaker or at receptacle level?


They don't make three phase GFCI breakers or devices that I am aware of.
This product appears to fill the need, if ordered correctly.
 
From the NEC definitions:
Informational Note: Class A ground-fault circuit interrupters trip when the current to ground is 6 mA or higher and do not trip when the current to ground is less than 4 mA. F

Nothing in the NEC requirements for GFCI protection in commercial kitchens states where in the circuit it’s required to be.
