GFCIs for 208/2 and 208/3 ckts - no 120v load - no neutral

Hi all - so we design a lot of Kitchens, therefore we spec GFCI breakers for kitchen circuits. Just received this question from a contactor:

...will GFCI breakers work since the types of receptacles for that equipment do not have a neutral? How would we connect to GFCI breaker?...

We have 20/2, 30/2, 40/2, 50/2, and a 40/3 circuits. All to kitchen equipment, like ovens, coffee brewers, etc.

My reply was that NEC 210.8(B) uses the term "all receptacles"...

make sense ?
Will the GFCI breakers work ?

And, if you don't hook the neutral pigtail up and land the circuit load conductors as normal it will function as a standard breaker with no gfi protection at all.
